Eel Over Rice
Makes 4 servings.
- 250g (1 package) eel, cooked, frozen, and covered in unagi sauce
- 1 cup of mixed rice, dry
- water
Add rice to rice cooker. Fill rice cooker with water, up to the ‘1’ line. Set the rice cooker to ‘brown rice’ and push the ‘start’ button. Remove frozen eel from package and place on toaster-oven sized baking sheet. Squeeze as much of the unagi sauce as possible from the package, onto the eel. Move toaster oven rack to middle position. Broil eel in toaster oven for 15 minutes. Serve eel over rice.
